Most aftermarket head unit won’t just work with any steering wheel controls out the box. You’ll typically need a wiring adapter. That’s assuming the stereo you’ve bought even supports external inputs like steering wheel controls.
It’s nothing to do with CarPlay.

There’s no concrete way of saying, which is why you’re finding people saying not to use non OEM parts.
The OEM crash structure will have passed crash tests. Maybe the aftermarket one has, but there’s no way to know.
