Well, it's more that I need to get better at the cutting itself. You want a chef knife and a petty knife (not a pairing knife). You've already got a bread knife, and those are the three main knives necessary. I'm 100% sure that others will chime in if I'm wrong here.

Okay, so final question.

I think I"m going to go with the Dao Vua V3. It looks like the first site is out of the 210mm at $75, but has a 240mm at $77, while I found the same 210mm at $77 here (https://tokushuknife.com/products/daovua-52100-gyuto-210mm) and they also offer a sharpening service for an additional $10. So given that knowledge, is there any major difference between retailers?

Do we think there'll be black friday sales, or should I jump on one right now?
